Salad
Seared Ahi tuna over carrots, peppers, sesame seeds, pickled ginger and mixed greens in a fresh lime vinaigrette (No oil at all in vinaigrette!)
Entrée
Herb and Balsamic marinated grilled chicken breast over wild mushroom bread pudding with ratatouille and cumin scented carrot puree
Dessert
Red wine poached pear with kiwi sorbet
